Italian Casserole
If you like spicy Italian food, you'll enjoy this one.

1 cup macaroni1 chopped red pepper
1 to 3 cloves garlic, crushed1 chopped green pepper
1 chopped onion1/2 lb. salami or polish sausage, cut in chunks
2 sixteen oz. cans stewed tomatoes2 to 4 oz. sliced or chopped black olives
1/2 lb thinly-sliced mozzarellasalt & pepper
1 Tblsp tomato pasteItalian seasoning, to taste (We like lots.)

Cook macaroni and place into a 9x13 dish. Fry onion and garlic in skillet. Add tomatoes, paste, peppers, meat, and olives. Stir well. Simmer uncovered for five minutes. Season with salt, pepper, and spices. Pour over macaroni. Stir, and cover with cheese.

Bake uncovered 350 degrees for 20 minutes or until cheese is melted.

Quick & Easy Salted Nut Roll
The combination of salty and sweet makes this an irresistable candy. It is similar to a Payday candy bar, but more intense.

10 oz. peanut butter chips7 oz. marshmallow creme
14 oz. sweetened condensed milk24 oz. salted peanuts, divided

In medium saucepan, melt chips over low heat. Stir in milk and marshmallow creme. Remove from heat. Put 2 cups of peanuts in the bottom of a 11x7 inch pan sprayed with cooking spray. Pour hot peanut butter mixture over peanuts. Sprinkle with remaining peanuts. Pack down lightly. Freeze until firm. Cut into 1-inch squares. (Ours are much larger!) Store in freezer.
