Christmas Snack Mix
This is another good recipe I got from my Mom. It can be adapted to go with different holidays.

2 cups salted peanuts10 oz. mini pretzels (Christmas tree shape if available)
5 cups Cheerios24 oz. white chocolate chips or almond bark
5 cups Corn Chex(If using white chocolate chips) 3 Tbsp vegetable oil.
1 lb. plain Christmas M&Ms

Mix peanuts, cereals, M&Ms, and pretzels in a giant bowl. In a small bowl, microwave chocolate & oil or almond bark for two minutes. Stir. Microwave another 30 sec. or until melted. Pour melted mixture over dry ingredients and mix well. Dump and spread onto waxed paper. Cool and break up. Store in air-tight container. Makes 5 quarts.

Pumpkin Walnut Pie
We found this recipe in a flyer we got in the mail. We tried it for Thanksgiving and really enjoyed it.

Pumpkin Layer
1 unbaked 9" pie crust1/3 cup sugar
1 egg, lightly beaten1 tsp. pumpkin pie spice
1 cup cooked pumpkin

Combine egg, pumpkin, sugar, and spice in medium bowl. Spread over bottom of pie crust

Walnut Layer
2/3 cup light corn syrup3 Tblsp. melted butter
2 eggs, lightly beaten1/2 tsp. vanilla extract
1/2 cup sugar1 cup chopped walnuts

Combine corn syrup, eggs, sugar, butter, and vanilla. Stir in walnuts. Spoon over pumpkin mixture.

Bake pie at 350 degrees for 45-50 minutes or until filling is set. Cool on wire rack.
