Sausage Bean Chowder
There's a whole lot of flavor in this little soup.
| 1 lb. bulk sausage | | 1 cup diced raw potatoes |
| 32 oz. kidney beans | | 1 bay leaf |
| 1 can stewed tomatoes | | salt and pepper |
| 1 qt. water | | 1/2 tsp. garlic salt |
| 1 chopped onion | | garlic (to taste) |
| mixed vegetables (frozen) | | 1/2 cup chopped green pepper |
Fry then drain sausage. In a pot, mix together all ingredients except potatoes, green pepper,
and vegetables. Cook on stove top for 1 hour. Add the rest of the ingredients and cook an additional
20 minutes.
Cheesy Puffins
These easy-to-make muffins go well with any soup. We love having them with the Sausage Bean Chowder.
| 2 cups biscuit mix (i.e. Bisquick) | | 2 Tbsp. sugar |
| 1 egg | | 2/3 cup milk |
| 1 cup shredded cheese | | |
Mix all of the ingredients and fill greased muffin cups 2/3 full.
Bake 15 minutes at 400 degrees.
